About This
- Nutrient-Rich Root Crop - Burdock is a biennial herb or vegetable known for its nutritious and flavorful root. Best grown outdoors, the plants grow are tall, reaching an average height of 3 to 6 feet, with a large, broad leaf that can be 2 feet in diameter. In the second year, these plants produce tall stalks with pink-purple flower and prickly burrs that contain the seeds.
- Culinary and Medicinal Uses -Burdock root is useful in both culinary dishes and traditional medicine. The roots are for inflammation and can be dried and used to make a healthy tea. As a veggie, it can be eaten raw, in stir-fries, soups, or roasted. In Japan, pickled burdock root is a side dish known as "gobo no tsukemono."
